How to Read Your Prep List and Know What to Do First

Every kitchen has preparation work that must be finished before service. Some days the list is short. On busy days it can feel like there is too much to do.

When I teach a new Commis Chef, I always explain that working fast is not just about how quickly you can prepare food. It is also about knowing what to do first.

A good prep list helps us organise our work and make sure the kitchen is ready on time.

Read Your Prep List Before Starting

Before picking up your knife, take a moment to read the whole prep list.

Check what needs to be prepared and how much is required. You should also understand when each task needs to be finished.

It is worth checking what has already been prepared. There is no reason to make another batch of sauce if enough is already available and ready to use.

If something on the list is not clear, ask your chef before starting.

A few minutes of planning can save a lot of time later.

Learn What to Do First

Not every task takes the same amount of time.

Imagine your prep list includes making a sauce that takes 45 minutes. You also need to cut vegetables and prepare some garnishes.

I would normally start with the sauce because it takes longer. While it is cooking, I can work on other tasks as long as the sauce can be monitored safely.

But the order can change depending on what the kitchen needs first.

If your chef needs the vegetables for an early order, that task may become more important.

This is why understanding the priorities is just as important as following the list.

Keep Track of Your Work

As you finish each task, mark it on your prep list.

Make sure the food is checked and stored correctly. Label everything according to your kitchen's procedures.

If you are running behind or an ingredient is missing, inform your chef early.

Do not leave unfinished preparation for the next shift without telling anyone.

Final Thoughts

A prep list is more than a list of jobs. It helps us manage our time and prepare for a smooth service.

When you first start working in a kitchen, it is normal to need some guidance. With practice you will become better at planning your own work.
