Red Duck Curry

My take on traditional Thai roasted duck red curry. Tender duck breast with crispy skin served in a rich red curry sauce with pineapple and lychee.

Cutoro roll

Story

Thai roasted duck red curry has always been one of the dishes I enjoy. I wanted to keep its original character but try a different approach to cooking the duck.

Instead of roasting the whole duck or cooking the meat directly in the curry, I decided to work with premium duck breast.

I explored sous vide cooking at 57°C to achieve a tender and juicy texture. The skin is then carefully seared until golden and crispy. This gives the duck a nice contrast between the soft meat and the crispy skin.

For the sauce I kept the familiar flavours of Thai red curry. I added pineapple to bring natural sweetness and acidity. Lychee gives a softer sweetness while cherry tomatoes add a little freshness.

The duck is sliced and served over the curry just before serving. I wanted the dish to feel familiar but with more attention to how each element is prepared.

Concept & inspiration

The inspiration came from Gaeng Phed Ped Yang, a traditional Thai roasted duck red curry.

I wanted to explore how a classic Thai dish could be developed further without losing what makes it special.

One of the main changes was cooking the duck separately from the curry. This gives me more control over the texture and allows the skin to stay crispy.

The fruit also plays an important role. Pineapple and lychee are already familiar ingredients in this style of Thai curry. I wanted to use their natural sweetness to balance the spice and richness of the sauce.

For me this is what food development is about. Understanding the original dish and finding ways to improve the cooking process while keeping its identity.

Development Note

This dish was developed as part of my personal food development work.

The 57°C sous vide temperature was explored as part of the concept. It should not be treated as an approved commercial cooking procedure without further validation.

Before introducing this dish to a hotel or restaurant menu, the duck would need to be sourced from an approved supplier with proper food safety certification and traceability.

The complete sous vide cooking process would also need to be validated by the food safety team to meet HACCP and local food safety requirements before service.
